Fall in Love with Fall Lighting

 
 
 
 

We are coming into the time of year when good sources of lighting is more important than ever....yes, the sun is leaving us more and more everyday!  But we can brighten out our homes with quality and beauty with the proper lamps.

There are really 2 kinds of artificial light: task and ambient.  Ambient light is provided by chandeliers, ceiling cans and sconces.  Task light is by floor and table lamps. Remember that dark shades such as black and brown do not give alot of task light, but are good for drama and a cozy feeling.  

Be sure that the lamp is tall enough to have its light fall on the area that is needed to be lit. 
 
Same thing goes for a floor lamp.  Make sure it is the right height for the chair next to which it stands.  Lamps of all kinds have become statements of style and can be used as accessories as well as being functional.  Keep the balance by using a fat lamp on a skinny table or a skinny lamp on a fat table. 

Whatever kind of lamp you find, make it say something about you, but remember to make it work!

Sweet Potato Hash




Welcome the flavor of fall with a tasty and quick sweet potato hash. Have fun with eating something for dinner that is out of the ordinary.



Ingredients:
  • 3 tbs olive oil
  • 1/2 cup sweet onion
  • 2 cups ground chicken or seitan (vegetarian option)
  • 1 red bell pepper diced
  • 1 sweet potato peeled and diced
  • Salt and pepper to taste
  • 1/2 cup vegetable stock
  • 1 TBS minced fresh rosemary
  • 1 TBS minced fresh thyme 
  • 1 TBS minced fresh chives
  • Eggs (optional)
     
 

 
Preparation:

Place 1 TBS of the oil in a large skillet over medium heat.  Add the meat/seitan to the skillet and sauté 5 minutes stirring frequently.  Remove the meat/seiten from the pan and set aside.  Add the remaining oil to the skillet.  Add the onion and bell pepper and sauté 3-5 minutes or until soft.  Add the sweet potato and season with salt and pepper.  Sauté 5 minutes or until nearly tender.  Reduce the heat to medium and stir in the broth.  Return the meat/seitan to the skillet.  Stir in the rosemary, thyme and chives and cook for additional 5 minutes or until the potatoes are tender.  Serve hot with fried eggs on top if wanted.
